Turkey-Pork Meatball with Penne, Spinach, and Pesto!

Ingredients:
1 lb of ground turkey
1lb of ground pork
1/2 cup grated Parmesan
2 eggs beaten
1/4 cup flour
1 cup white cooking wine
1/4 cup of onion minced
1/4 cup of garlic minced
Palmful of oregano
Heaping palmful of parsley
2 tbls of pepper
1 tbls of salt

Mix all the ingredients mixing the meat in last. Mix well and form meatballs to desired size.

Boil Penne al dente about 10 min.

Pesto Ingredients:
3 cups of fresh basil leaves
1 cup of pine nuts or almonds
1/2 cup of grated Parmesan
4 cloves of garlic
1 cup of Olive oil
2 tbls of lemon juice
Salt and pepper to taste

Cooking Instructions:
Heat a skillet to about 350 (med high on most stove tops)
Drizzle bottom of skillet with about 2 tbls of EVOO
Cover and Cook meatballs for about 8 min. or until cooked completely. Stirring every couple of min. Add pesto to skillet for about two minutes stirring constantly until pesto is melted and coating all of the pasta.
